Why Quick Leftover Turkey Tetrazzini is my favorite use of Thanksgiving leftovers..
..because it completely transforms the flavors that you just had from Thanksgiving into something that tastes completely new! It’s a creamy noodle casserole dish that tastes nothing like Thanksgiving when you can’t imagine eating anymore of that stuff. Another great reason is because it will feed your whole family dinner in very little time when slaving away in the kitchen is the last thing you’d want to do the days after the big cooking holiday.
Ingredients
- 2-3 Cups chopped leftover turkey
- 1 Pound cooked spaghetti
- Half a bag of frozen peas
- 1 chopped onion
- A few shakes of Parmesan Cheese
- 1 Can of Cream of Chicken Soup
- Breadcrumbs of your choice
- 2 Tablespoons of butter
- 1 Tablespoon of dried Thyme
- Salt/Pepper to taste
Instructions
- Preheat oven to 400 degrees.
- In a skillet, heat up the butter.
- Once melted, add chopped onion and add the salt, pepper and thyme.
- Cook onion until soft, about 5 minutes.
- Add the peas, turkey, cream of chicken, and parmesan cheese to the skillet and combine until everything comes together.
- Transfer contents to a baking dish and top with breadcrumbs.
- Bake until heated through and bubbly, about 10-15 minutes.
Tip: Add mozzarella cheese or an extra can of cream of chicken or cream of mushroom to make this even more creamy!
