I love that the whole dinner can be made into one foil! The flavors are delicious with the flaky salmon on top of a bed of the tender potatoes. The easy clean up is another reason to love it too.

Ingredients
- 4 Salmon fillets
- A couple Yukon gold potatoes, sliced
- 4 Tablespoons butter
- 4 Tablespoons olive oil
- 1 Lemon, thinly sliced
- 4 Tablespoons dried parsley
- Salt
- Pepper
Instructions
- Preheat oven to 400 degrees.
- Lay out 4 sheets of aluminum foil large enough to hold and close around the potatoes and fish.
- Place the sliced potatoes in the foil first.
- Drizzle 1 tablespoon of olive oil, salt and pepper and toss to coat.
- Place the salmon fillet on top, season with salt pepper, 1 tablespoon of garlic powder and 1 tablespoon of parsley.
- Add one tablespoon of butter on top of the fillet.
- Wedge the lemon slices in with the salmon and potatoes.
- Repeat for remaining packets.
- Bake for 30 minutes and enjoy.
