Salmon Foil Packs

I love that the whole dinner can be made into one foil! The flavors are delicious with the flaky salmon on top of a bed of the tender potatoes. The easy clean up is another reason to love it too.

Ingredients

  • 4 Salmon fillets
  • A couple Yukon gold potatoes, sliced
  • 4 Tablespoons butter
  • 4 Tablespoons olive oil
  • 1 Lemon, thinly sliced
  • 4 Tablespoons dried parsley
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Lay out 4 sheets of aluminum foil large enough to hold and close around the potatoes and fish.
  3. Place the sliced potatoes in the foil first.
  4. Drizzle 1 tablespoon of olive oil, salt and pepper and toss to coat.
  5. Place the salmon fillet on top, season with salt pepper, 1 tablespoon of garlic powder and 1 tablespoon of parsley.
  6. Add one tablespoon of butter on top of the fillet.
  7. Wedge the lemon slices in with the salmon and potatoes.
  8. Repeat for remaining packets.
  9. Bake for 30 minutes and enjoy.
