Ingredients
- 2 Pieces of your favorite bread or whatever bread you have (I love multigrain)
- Shredded vegan cheese
- Vegan Butter
- Small handful of fresh spinach leaves
- A few slices of tomato
- Sliced avocado
- Salt
- Pepper
- Sriracha (optional)
Directions
- Set the oven to broil.
- Place the two slices of bread in a toaster until JUST lightly toasted and has a little bit of color. (We want to toast a little bit in the toaster first because the bread will get a little soggy in the middle if it goes straight in the broiler without any firmness with the cheese on top)
- Put the two slightly toasted pieces of bread on a baking sheet.
- Spread the butter on each slice and add salt and pepper to taste.
- Next, sprinkle vegan cheese on top.
- Broil for a few minutes keeping a close eye on it until the toast is lightly browned and the cheese has melted.
- Put the slices onto a plate, add the tomatoes, spinach, and avocado and form into a sandwich.
- Add Sriracha for a little spice if you want.
- Enjoy!
