Roasted Sweet Potatoes

Sweet potatoes are one of my favorite vegetables, and roasting them is the best way to bring out all of its natural flavors. With just a handful of your pantry seasonings you can have a delicious side or make a meal out of it on top of some salad. These are a great vegetable for the holiday season too.

Instructions

  1. Preheat oven to 400 degrees.
  2. Drizzle the olive oil and seasonings all over the potatoes and mix together. Rub on until each potato is evenly coated in seasoned oil.
  3. Using a fork, poke holes a few times on each side into each potato.
  4. Heat in oven for about 45 minutes or until fork tender, turningg halfway through.
  5. Enjoy!

Tip: This is a great side dish, or you can even serve this on the side of salad or on top of some quinoa and have yourself a healthy, nutritious, vegan lunch.
