Sweet potatoes are one of my favorite vegetables, and roasting them is the best way to bring out all of its natural flavors. With just a handful of your pantry seasonings you can have a delicious side or make a meal out of it on top of some salad. These are a great vegetable for the holiday season too.

Ingredients
- A few sweet potatoes
- 1/4 Cup olive oil
- 3 TBSP garlic powder
- 2 TBSP paprika
- Salt/Pepper to taste
Instructions
- Preheat oven to 400 degrees.
- Drizzle the olive oil and seasonings all over the potatoes and mix together. Rub on until each potato is evenly coated in seasoned oil.
- Using a fork, poke holes a few times on each side into each potato.
- Heat in oven for about 45 minutes or until fork tender, turningg halfway through.
- Enjoy!
Tip: This is a great side dish, or you can even serve this on the side of salad or on top of some quinoa and have yourself a healthy, nutritious, vegan lunch.
