This salad is unbelievably easy and very filling. It’s great to eat in the middle of the day on your lunch break or even for dinner when you don’t have much time to cook. I love pesto so much that I tried seeing how it would taste in salad and it did not disappoint. The protein from the pesto and turkey paired with the crunchiness of the salad makes this such a filling and satisfying dish.

Ingredients
- 1 Cup of turkey, sliced (Deli meat or leftover is fine)
- 1/2 cup of your favorite shredded cheese or chopped fresh mozzarella cheese
- 2-3 Tablespoons of your favorite pesto sauce
- 2-3 Tablespoons of your favorite vinagrette
- 1 head of romaine lettuce, chopped
- 1 carrot, shredded
- 1 cucumber, sliced into half moons
- Handful of cherry tomatoes, halved
- Croutons, optional
Instructions
- Throw all the vegetables into a big bowl.
- Add the pesto and vinegrette and toss until everything is combined well.
- Add the chopped turkey, cheese and croutons on top.
- Enjoy!
Tip: You don’t have to strictly go by the salad veggies that I listed. Add whatever your favorite veggies are for salads instead or use whatever you have in the fridge!
