Roast Chicken

Not only is this a simple recipe that requires only a few ingredients, but this stuffed and seasoned bird with juicy meat and crispy skin will be sure to fill your home with happy eaters and a home that smells delicious.

Ingredients

  • 6 lb Chicken (whatever size is fine, for this recipe we are just choosing this size)
  • 1 Lemon, cut in half
  • 1 Head of garlic, cut in half
  • 1 Yellow onion
  • 1 Teaspoon dried thyme or rosemary or both!
  • Olive oil
  • Butter, softened
  • Salt
  • Pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Remove the contents from inside the bird and rinse the inside and outside of the chicken.
  3. Pat dry the chicken. (make sure you’re thorough with this step, we want the skin to get nice and crispy!)
  4. Drizzle the bird both outside and the inside with olive oil, or rub the bird with the softened butter (it comes out delicious either way). If using butter feel free to stuff some underneath the skin too.
  5. Season the OUTSIDE of the bird with salt, pepper, dried thyme and dried rosemary.
  6. Season the INSIDE of the bird with salt and pepper.
  7. Stuff the chicken with the lemon, garlic and onion.
  8. Roast the chicken in a roasting pan for 20 minutes per pound. (For this recipe since a 6 pound chicken is used we will leave it in the oven for two hours)
  9. Remove from oven and let rest for around 20 minutes, then serve.

Tip: Before laying the chicken down in the roasting pan, you can add a layer of chopped up veggies to the bottom of the pan for the chicken to lay on. Carrots, celery and potatoes work great!
