These stuffed peppers are loaded up with your favorite Tex Mex flavors without the tortillas, and just as satisfying!

Ingredients
- 3-5 Bell Peppers (whatever color you like or have!)
- 1 pound ground Beef or ground Turkey
- 1 Onion, chopped
- 1 Cup cooked rice
- 1 Can Black Beans
- 1/2 Cup of whatever shredded cheese (Cheddar or Pepperjack works great)
- 1 Cup of canned/frozen/fresh corn
- 1 Jar salsa
- Olive oil
- Salt/Pepper
Instructions
- Preheat the oven to 350 degrees.
- Cut off the upper portions of the bell peppers and set aside.
- In a skillet, add the olive oil.
- When the olive oil is hot, add the ground meat and season with salt and pepper.
- When the meat is browned and cooked through, add the chopped onion and stir to combine.
- When the onion is translucent, add the rest of the ingredients until everything comes together.
- Place the bottom portions of the bell peppers in a baking dish.
- Add the filling to the bottom portions of the bell peppers and add some extra shredded cheese on top.
- Cover the bell peppers with their lids and place baking dish into oven.
- Bake for 40 minutes.
- Remove from oven and enjoy!
Tip: I love serving these with guacamole and sour cream with some chips!
