Tex Mex Stuffed Peppers

These stuffed peppers are loaded up with your favorite Tex Mex flavors without the tortillas, and just as satisfying!

Ingredients

  • 3-5 Bell Peppers (whatever color you like or have!)
  • 1 pound ground Beef or ground Turkey
  • 1 Onion, chopped
  • 1 Cup cooked rice
  • 1 Can Black Beans
  • 1/2 Cup of whatever shredded cheese (Cheddar or Pepperjack works great)
  • 1 Cup of canned/frozen/fresh corn
  • 1 Jar salsa
  • Olive oil
  • Salt/Pepper

Instructions

  1. Preheat the oven to 350 degrees.
  2. Cut off the upper portions of the bell peppers and set aside.
  3. In a skillet, add the olive oil.
  4. When the olive oil is hot, add the ground meat and season with salt and pepper.
  5. When the meat is browned and cooked through, add the chopped onion and stir to combine.
  6. When the onion is translucent, add the rest of the ingredients until everything comes together.
  7. Place the bottom portions of the bell peppers in a baking dish.
  8. Add the filling to the bottom portions of the bell peppers and add some extra shredded cheese on top.
  9. Cover the bell peppers with their lids and place baking dish into oven.
  10. Bake for 40 minutes.
  11. Remove from oven and enjoy!

Tip: I love serving these with guacamole and sour cream with some chips!
