This is so filling, vegetarian, and even great for a post workout meal. Sometimes I will have this one big multigrain toast, and other times I will just serve it minimally with just the sliced avocado on the bottom. It would even be delicious over rice.

Ingredients
- Your favorite frozen veggie burger
- 1 Egg
- 1 Avocado
- Salt/Pepper to taste
- 1 Cup of cooked rice, or 1 piece of multigrain toast
- Sriracha, optional
Instructions
- Prepare your burger according to package instructions.
- While burger is cooking, get your toast or rice ready on the plate.
- Slice avocado.
- When the burger is done, set aside.
- In the same pan that the burger was cooking on, add some butter or oil and fry your egg.
- While the egg is finishing cooking, add the sliced avocado and burger on top of the rice or toast.
- Lastly, add the fried egg on top.
- Drizzle all over with sriracha if desired.
