Roasted Potatoes

I won’t sugar coat this- I want you to get the baby Yukon Gold Potatoes! No other potato compares to the creaminess of these. Roasting gives them the tight, crispy, salty skin on the outside that pops as you take a bite.

Ingredients

  • 1 Bag of baby Yukon Gold Potatoes (fine-if you have another kind of baby potatoes you can use those!)
  • A few tablespoons of olive oil
  • 2 Tablespoons dried rosemary
  • Salt/Pepper

Instructions

  1. Preheat the oven to 400 degrees.
  2. Toss the potatoes, olive oil and seasonings in a big bowl and place on a baking sheet.
  3. Bake for 45 minutes, or until potatoes are fork tender.
  4. Enjoy!

Tip: Serve this as a side of your favorite dinner, or make this THE meal and just have a salad along with it!
